The aim of this study was to evaluate the effect of wheat starch acetylation on model obese mice and hyperglycemia by streptozotocin. Obese male Swiss mice were intraperitoneally administered a single dose of streptozotocin 180 mg/kg or 100 mg/kg, and multiple low doses of Streptozotocin 40 mg/kg/day. Blood glucose concentrations were measured every week after streptozotocin injection. Assessing the model’s availability by the test of the postprandial glucose response of wheat starch acetylation, obese mice with hyperglycemia divided into 3 groups: TBTN-mice fed natural wheat starch once a day, TBAC 1-mice fed wheat starch acetate once a day and TBAC 2-mice fed wheat starch acetate twice a day. Measured glucose level immediately and 30, 60, 90, 120 minutes after a meal. Multiple low doses of STZ 40 mg/kg, i.p. to mice for five consecutive days have been found a suitable model to study respond with postprandial glucose blood of wheat starch acetylation. According, mice in the TBAC 2 group had a stable and regulate postprandial glucose blood than the TBTN group. AUC of glucose in the TBAC groups in 120 minutes was lower than TBTN (p < 0,05).
